Banana and Peanut Butter Smoothie

 

 

Peanut butter may sound an unusual ingredient in a smoothie, but in fcat it combines wonderfully well with bananas to make a rich, satisfying drink. Peanuts contain resveratol, plant sterols and other phytochemicals which, according to research, have cardio-protective and cancer inhibiting properties. This high calcium drink is a great pick me up after exercise.

 

1 ripe banana

300ml (1/2 pint) semi skimmed milk

1 tablespoon of smooth peanut butter or 2 teaspoons of tahini paste

 

Peel and slice the banana, put it in a freezer container and freeze for at least 2 hours overnight. Put the banana, milk and peanut butter or tahini paste in a food processor or blender and process until smooth. Serve immediately.

 

Makes 400ml (14fl oz); Serves 1

 

Nutrition notes

Tahini paste is a delicious paste made from crushed sesame seeds. Weight for weight, sesame seeds contain ten times more calcium than milk. This smoothie is an excellent source of vitamins C, B1, B2 and B6, B12,  folic acid, niacin, calcium, potassium, zinc, magnesium and phosphorus..
